Surrounded by grand pink houses, in the red-brick that is common to the region, and set above fine arcades, it is a very attractive central square. It was largely rebuilt in the 17th century after a fire. The arcades of are an unusual 'double' construction - one set of arcades near the house/shop fronts and another closer to the square.<br />Complete on all four sides, this central square in Montauban is one of the most impressive to be seen in all of the bastide towns of south-west France.<br />Be sure to take refreshments in one of the cafes that line the square, then wander around the surrounding streets a little, and past the Church of Saint Jacques - an attractive 13th century church with a square tower and an impressive mosaic entrance. Following the traditional grid pattern of a bastide town, the straight streets of the town centre now form a lively shopping centre, with lots of interesting features and buildings to href="http://en.wikipedia.org/wiki/Herb">herb</a> that is grown as a <a title="Perennial plant" href="http://en.wikipedia.org/wiki/Perennial_plant">perennial</a> in warm, tropical climates. Basil is originally native to <a title="India" href="http://en.wikipedia.org/wiki/India">India</a> and other tropical regions of <a title="Asia" href="http://en.wikipedia.org/wiki/Asia">Asia</a>, having been cultivated there for more than 5,000 years. It is prominently featured in varied cuisines throughout the world including <a title="Italian cuisine" href="http://en.wikipedia.org/wiki/Italian_cuisine">Italian</a>, <a title="Cuisine of Thailand" href="http://en.wikipedia.org/wiki/Cuisine_of_Thailand">Thai</a>, <a title="Cuisine of Vietnam" href="http://en.wikipedia.org/wiki/Cuisine_of_Vietnam">Vietnamese</a> and <a title="Cuisine of Laos" href="http://en.wikipedia.org/wiki/Cuisine_of_Laos">Laotian</a>. It grows to between 30–60 cm tall, with opposite, light green, silky <a title="Leaf" href="http://en.wikipedia.org/wiki/Leaf">leaves</a> 3–5 cm long and 1–3 cm broad. The flowers are quite big, white in color and arranged in a terminal <a title="Raceme" href="http://en.wikipedia.org/wiki/Raceme">spike</a>. Unusual among <a title="Lamiaceae" href="http://en.wikipedia.org/wiki/Lamiaceae">Lamiaceae</a>, the four <a title="Stamen" href="http://en.wikipedia.org/wiki/Stamen">stamens</a> and the <a title="Pistil" href="http://en.wikipedia.org/wiki/Pistil">pistil</a> are not pushed under the upper lip of the <a title="Corolla (flower)" href="http://en.wikipedia.org/wiki/Corolla_%28flower%29">corolla</a>, but lay over the inferior. After <a title="Entomophily" href="http://en.wikipedia.org/wiki/Entomophily">entomophilous</a> pollination, the corolla falls off and four round <a title="Achene" href="http://en.wikipedia.org/wiki/Achene">achenes</a> develop inside the bilabiate <a title="Calyx (botany)" href="http://en.wikipedia.org/wiki/Calyx_%28botany%29">calyx</a>. The plant tastes somewhat like <a title="Anise" href="http://en.wikipedia.org/wiki/Anise">anise</a>, with a strong, pungent, sweet smell. Basil is very sensitive to cold, with best growth in hot, dry conditions. While most common varieties are treated as <a title="Annual plant" href="http://en.wikipedia.org/wiki/Annual_plant">annuals</a>, some are <a title="Perennial plant" href="http://en.wikipedia.org/wiki/Perennial_plant">perennial</a>, including <a title="African Blue basil" href="http://en.wikipedia.org/wiki/African_Blue_basil">African Blue</a> and Holy Thai basil.<br />The word basil comes from the <a title="Greek language" href="http://en.wikipedia.org/wiki/Greek_language">Greek</a> βασιλεύς (<a title="Basileus" href="http://en.wikipedia.org/wiki/Basileus">basileus</a>), meaning "king", as it is believed to have grown above the spot where <a title="Constantine I" href="http://en.wikipedia.org/wiki/Constantine_I">St. Constantine</a> and <a title="Helena of Constantinople" href="http://en.wikipedia.org/wiki/Helena_of_Constantinople">Helen</a> discovered the <a title="True Cross" href="http://en.wikipedia.org/wiki/True_Cross">Holy Cross</a>. The <a title="Oxford English Dictionary" href="http://en.wikipedia.org/wiki/Oxford_English_Dictionary">Oxford English Dictionary</a> quotes speculations that basil may have been used in "some royal unguent, bath, or medicine". Basil is still considered the "king of herbs" by many cookery authors. An alternative etymology has "basil" coming from the <a title="Latin" href="http://en.wikipedia.org/wiki/Latin">Latin</a> word basilicus, meaning <a title="Dragon" href="http://en.wikipedia.org/wiki/Dragon">dragon</a> and being the root for <a title="Basilisk" href="http://en.wikipedia.org/wiki/Basilisk">basilisk</a>, but this likely was a linguistic reworking of the word as brought from <a title="Greece" href="http://en.wikipedia.org/wiki/Greece">Greece</a>.<br /><br /><br />Basil is one of the main ingredients in <a title="Pesto" href="http://en.wikipedia.org/wiki/Pesto">pesto</a>—a green Italian oil-and-herb sauce from the city of <a title="Genoa" href="http://en.wikipedia.org/wiki/Genoa">Genoa</a>, its other two main ingredients being olive oil and pine nuts.<br />Pesto, which originated in Genoa, Italy, comes from the Italian word pestare that means to pound or to bruise. Con la discrezione che si addice all’ambiente ligure, il territorio riserva gradevoli sorprese al visitatore, svelando poco a poco le chiese e i palazzi disseminati nelle frazioni, un ambiente incontaminato, una storia importante, una cultura secolare. L’ambiente naturale, uno di più integri e suggestivi dell’intera regione, il pregio dei suoi piccoli tesori artistici – l’architettura rurale, la cultura contadina, i manufatti che arricchiscono chiese e palazzi, le testimonianze devozionali – le attività commerciali e i servizi sorprendono per l’inaspettata varietà e consistenza. Il passato convive con un presente di attivo centro agricolo e commerciale, dotato di moderne strutture turistiche.<br /><br /><br />Il paesaggio urbano del Borgo offre la scoperta di piccoli tesori di arte, suggestive planimetrie e architetture di rara bellezza che si possono ammirare nei portali di pietra, nei festosi interni dei palazzi signorili e nei preziosi arredi sacri delle Chiese “piccoli musei” di memoria storica, artistica e religiosa che nel seicento contava la presenza di cinque chiese<br /><br />LA CHIESA DI SAN FILIPPO NERI E SANTA TERESA D’AVILA: situata sul lato della piazza prospiciente il Castello, fa parte del Convento delle Monache Agostiniane, elevato a Monastero di clausura nel 1652. La chiesa venne consacrata nel 1676; al suo interno, sulla parete sinistra, vi è il “San Francesco Saverio” di Gregorio De Ferrari, Barocche sono la struttura della chiesa, a pianta centrale, e le decorazioni. Il Monastero, con il suo meraviglioso giardino è il luogo dove le monache coltivavano erbe aromatiche, preparavano sciroppi di rosa, confezionavano funghi secchi e dolci di pasta di mandorla cavi all’interno e dalle forme “rubate” alla natura: frutti, verdura e fiori da quest’ultimi il nome “Sciuette”, la cui ricetta custodita gelosamente per secoli rimane e rimarrà tra le mura del convento.<br /><br />LA CHIESA DI SAN GIOVANNI BATTISTA: del XVI secolo, è affrescata con episodi della vita del santo; gli altari sono frutto della munificenza delle nobili famiglie locali che li abbellirono con pregevoli opere d’arte. Grande importanza riveste il culto della Vergine, due sono le opere d’arte che ben testimoniano la devozione dei Varesini a Maria: la statua in albastro della “Madonna con Bambino”, portata dall’Inghilterra dal Conte Pietro Giulio Cristiani nel 1551 insieme ad una “Trinità” in alabastro e la statua lignea della “Madonna della Visitazione” (XVIII secolo). Questa, attribuita a A.M. Maragliano, forse autore anche dell’Angelo Annunciante viene portata ogni anno in processione durante le celebrazioni solenni della festa della “Madonna di Luglio”. Da segnalare ancora il coro barocco in legno di noce, probabilmente proveniente dalla chiesa di Santa Croce di cui resta solo il campanile, attualmente Torre Civica.<br /><br />L’ORATORIO DEI SANTI ANTONIO E ROCCO: è un vero e proprio gioiello del Seicento varesino, situato al lato della chiesa parrocchiale di San Giovanni Battista. La sua costruzione è legata alla Confraternita dei Santi Antonio e Rocco costituitasi nel 1451 e tutt’ora attiva. L’impianto barocco è ben visibile soprattutto nell’altare e nel sipario soprastante, entrambi in stucco, da cui compare il simbolo della Repubblica di Genova, segno dell’alleanza della Confraternita con il Senato Genovese. Alle pareti tele dei Dodici Apostoli; sopra il portone di entrata un’Ultima Cena” copia di quella del Careggio; la volta è decorata da Giuseppe Galeotti, artista del XVIII secolo, con affreschi. Nell’arredo si segnalano i Cristi processionali, i fanali indorati con oro zecchino e i due pastorali in legno dorato con le effigi dei Santi Antonio e Rocco, risalenti al XVIII secolo.<br /><br />IL BORGO ROTONDO: nasce da un progetto urbanistico “moderno” ideato dai conti Fieschi, feudatari di Varese Ligure dal 1161, che affermarono il proprio controllo su un territorio al centro delle vie di comunicazione tra il Parmense e la Riviera Ligure di Levante.<br />I Fieschi idearono nel XIII secolo la costruzione di un complesso abitativo che fungesse anche da fortificazione; di qui l’impianto ellittico su cui vennero edificate case rigorosamente in muratura senza aperture esterne. Delle due porte originali rimane oggi quella Sottana. Il fossato e le mura furono costruite in un secondo tempo. Le spese vennero sostenute in parte da benestanti privati e in parte dai conti stessi per incentivare anche artigiani e mercanti a partecipare a quella che si può definire un’impresa comune. Nella piazzetta, che nella fase iniziale non prevedeva la fila di case “mediane”, si svolgeva il mercato; le case erano tute uguali, a due piani: i locali del pianterreno sotto i portici erano adibiti a magazzino o laboratorio, mentre i piani superiori fungevano da abitazione. Nel borgo i Fieschi edificarono una chiesa dedicata alla Vergine, la cui collocazione è quasi certamente nell’edificio che attualmente ospita gli uffici del Centro di Educazione Ambientale. Tra le case “mediane” si segnala la cosiddetta “Casa della Ragione o del Capitano” , dove si amministrava la giustizia, ampliata presumibilmente nella metà del XVI secolo, dopo la fallita congiura dei Fieschi; è ancora visibile una delle bifore sulla facciata.<br /><br />IL CASTELLO: nato su un preesistente castrum, testimonia con le sue vicende edilizie le vicissitudini storiche di Varese Ligure e ne attesta l’importanza assunta nel Basso Medioevo. Originariamente i Fieschi, si costruirono nella parte nord del Borgo una “casa” o “picciol Palazzo”, di cui non è rimasto nulla salvo il muro settentrionale che attualmente costituisce il lato sud del quadrilatero del Castello. Per sintetizzare le complesse fasi di costruzione, basti ricordare due nomi: Nicolò Piccinino, capitano di ventura milanese che, nel corso di una spedizione militare, fece erigere la torre alta di “offesa” nel 1435; Manfredo Landi che , sposata Antonia Maria Fieschi, costruì tra il 1472 e il 1478-79 il torrione difensivo, di forma cilindrica, in cui si possono notare le “bocche di fuoco”. I Fieschi, molto amati dalla popolazione, ripresero il controllo del Borgo e vi rimasero fino al 1547, anno in cui fallì la congiura di Gian Luigi Fieschi contro i Doria. Il Castello si prestò a diversi impieghi e benché attualmente di proprietà privata, viene concesso per ospitare mostre o convegni.<br /><br />IL QUARTIERE DI GRECINO: è uno dei primi insediamenti urbani, situato lungo la collina che digrada verso il torrente Carovana. Gioiello e simbolo di questo agglomerato è il Ponte ad una fornice, costruito nel 1515. Il versante meridionale è impreziosito da un bassorilievo in arenaria rappresentante Nascita, Morte e Risurrezione di Cristo, la cui cronologia è controversa; considerando la ruvidezza del tocco, si può pensare ad un artista locale che abbia tentato di riprodurre nella complessità teologica, un modello alto forse costituito dalle opere in albastro che un membro della famiglia Cristiani portò in paese dall’Inghilterra anglicana nel XVI secolo.<br /><br />LA TORRE CIVICA: era originariamente il campanile della Chiesa di sAnta Croce, annessa al Convento dei Padri Agostiniani, chiamati dai Confratelli dell’Oratorio dei Santi Antonio e Rocco e giunti a Varese nel 1563. All’avvento della Repubblica Democratica Ligure (1797) il Convento, cui era anche annesso un ospedale, venne chiuso definitivamente. Provengono dalla Chiesa di Santa Croce la “Madonna della Visitazione” e l’Angelo della Compagnia” , conservati nella parrocchiale. A poca distanza dalla Torre è situata quella che era la chiesa gentilizia del Conti Chiappe e sede della Confraternita della Morte e Orazione, chiamata anche Oratorio di Santa Sabina o “Compagnia”. L’edificio, sconsacrato nel XX secolo, ospita ora attività culturali. Di fronte si trova la Casa del Conte Giuseppe Arrivabene patriota mantovano, letterato e musicista, nonché benemerito fondatore della Filarmonica Varesina che nel 2002 ha festeggiato il 150° anniversario della sua fondazione.<br /><br />PALAZZO FERRARI: ora adibito a private abitazioni, è posto sul lato settentrionale della piazza principale. Un tempo prevedeva una sorta di ponte che permetteva l’accesso al giardino privato. Luogo in cui ora è situato il Monumento ai Caduti. Nella Cappella privata del palazzo furono celebrate le nozze di Domenico Pallavicini con Lugi Ferrari (1772 – 1841), a cui Ugo Foscolo dedicò la celeberrima ode “A Luigia Pallavicini caduta da cavallo”. Il portale è impreziosito da due telamoni in marmo.<br /><br /><br />Musei e gallerie d’arte<br />“Castello dei Fieschi”, attualmente di proprietà privata, viene concesso il suo utilizzo per ospitare mostre e convegni.<br />“Museo di Cassego” , tradizioni e oggetti della civiltà contadina – Cassego tel. 0187/843005<br /><br /><br /><br />PRODUZIONI TIPICHE LOCALI AGROALIMENTARI ED ARTIGIANALI<br /><br />I funghi porcini e le castagne costituiscono materia prima in tante ricette della tradizione locale, anche la produzione di miele biologico e la coltivazione dei frutti di bosco deliziano il palato al “forestiero”.<br />Tutti i piatti sono legati alla tradizione e ai prodotti della terra e del bosco:<br />I “ravioli” pasta fresca ripiena di verdure e carne da gustare con ragù di carne o ai funghi;<br />I “croxetti” dischetti di pasta decorata con disegni floreali da condire con salsa di noci o pinoli.<br />Le “Tagliatelle” di farina di castagna da condire con il pesto o la ricotta fresca.<br />Le carni soprattutto agnello e coniglio, insaporite dai profumi dell’orto, le torte di verdura dalla pasta tirata sapientemente con il “matarello” e i dolci della tradizione come il buccellato, il pandolce e quando è stagione il castagnaccio preparato con la farina di castagna, pinoli e uvetta.<br />Alcuni strumenti caratteristici sono usati per cuocere gli alimenti della tradizione: come la “ciappa”, una piastra d’ardesia posta sopra il fuoco su cui viene cotta la carne, ed il testo di terracotta per preparare la “figassetta” ottenuta dall’impasto di farina di mais, ed i “testieu” dall’impasto di farina di grano.<br />Inoltre Varese Ligure è situato nel cuore dell’Alta Valle del Vara denominata per le sue caratteristiche la “Valle del Biologico”. Sono più di 40 le aziende agricole che confluiscono le loro attività di allevamento nelle cooperative locali, per la produzione di carni e formaggi biologici. Guardiola- tel. 347/9225543)<br />Centro sportivo Varese Ligure – Piscina, campo da calcio, tennis, palestra – Via Pieve – 0187/842323<br /><br />Percorsi ed escursioni:<br />Anello del M.te Chiappozzo: tempo di percorrenza circa 7 ore– Percorso impegnativo e panoramico che si snoda in gran parte in quota, lungo i crinali degli alti monti che cingono le sorgenti del fiume Vara. Nei pressi del Monte Riso si possono ammirare i resti murari del torrione di Panizzaro che in epoca medievale dominava la zona della frazione di Comuneglia nelle alte terre del Vara. Si percorre la dorsale del M.te Zatta (1406 s.l.m.), che divide la parte alta della Valle del Vara dalla Valle del Taro, in Emilia Romagna. Si fiancheggia la densa e faestosa faggeta che ricopre il vesante nord del monte, sito di particolare interesse paesaggistico e conservativo, riconosciuto dalla Comunità Europea. Si procede lungo la crsta del M.te Chiappozzo (1126 s.l.m.) tra rocce affioranti e praterie di crinale, che ospitano diverse specie di orchidee. Da queste impervie montagne lo sguardo spazia, da una parte, sulle valli genovesi dei torrenti Reppia e Graveglia fino al Promontorio di Portofino e il mare, e, dall’altra, sui ripidi versanti che scendono sulla Val di Vara, sui quali sono aggrappati alcuni piccoli ed incantevoli paesi, incorniciati da prati, campi e estesi boschi di castagno.<br /><br />Anello del M.te Verruga: tempo di percorrenza circa 6 ore – Percorso che consente all’escursionista una completa immersione nella natura, l’incontro con le straordinarie bellezze paesaggistiche e la storia dei luoghi. Si attraversano estesi boschi di castagno e boschi misti di carpino nero, ornello, castano e cerro che ricoprono i freschi versanti settentrionali del M.te Verruga e del M.te Biscia. Si continua in quota lungo una panoramica strada sterrata, dove lo sguardo è rapito dalla Valle Graveglia e dai monti e colli che scendono verso il mare. Si attraversa un incantevole bosco con robusti ed alti alberi di faggio, fino a raggiungere le praterie di crinale tra i monti Verruga e Porcile. Lo sguardo si apre sull’impervia ed incassata valle del torrente Lagorara e sulle pareti rocciose del M.te Scogliera (importante sito di estrazione e lavorazione del diaspro in epoca preistorica), e. più avanti, sul massiccio del M.te Gottero e sui boschi, che, a perdita d’occhio, rivestono monti e valli laterali della Val di Vara. All’orizzonte, il profilo aspro delle Alpi Apuane e l’arco costiero toscano.<br />E ancora si procede tra i Castagni secolari e ruscelli dove, nel cuore del bosco, si incontra il mulino dei Brichetti che, con la sua umile maestosità incanta il visitatore<br /><br />Anello del M.te Gottero: tempo di percorrenza circa 7 ore – Il sentiero si snoda all’interno di uno dei più rilevanti Siti di Interesse Comunitario dell’Appennino Settentrionale per la conservazione degli habitat forestali e per la tutela di specie endemiche o rare, oltre che dei predatori al vertice delle catene alimentari quali l’aquila e il lupo.<br />Si attraversa, infatti, la Foresta Demaniale Regionale del Gottero: un’area di circa 500 ettari di bosco ceduo di faggio avviato da qualche decennio all’alto fusto. I versanti del massiccio del Monte Gottero (nome che deriva dall’antico germanico gott hart, dio selvaggio) sono coperti da vaste faggete ben conservate e di notevole bellezza paesaggistica. L’area intorno alla vetta è, invece, caratterizzata da pascoli: zona prativa di notevole interesse naturalistico, in quanto ospita numerose specie vegetali rare in ambito appenninico, oltre che diverse specie di orchidee. Dalla cima del Monte Gottero (m. 1639) il più alto della Provincia della Spezia, si apre allo sguardo uno straordinario panorama che comprende l’Appennino Ligure e l’Appennnino Tosco-Emiliano e, ancora, la Pianura Padana, le Alpi Apuane, i monti e le colline della Val di Vara e, sugli orizzonti infiniti del mare, la costa toscana e il Golfo della Spezia. Nelle giornate più limpide è possibile vedere tutto l’arco costiero ligure, le isole dell’Arcipelago Toscano e la Corsica. Si attraversano, inoltre, alcuni solchi vallivi con ruscelli incontaminati, lungo i quali crescono stretti boschi ripari ad ontani, salici e carpini neri. Inoltre si incontrano alcune torbiere e prati acquitrinosi che ospitano piante tipiche degli ambienti umidi.<br /><br />Anello di Varese Ligure: tempo di percorrenza circa 7 ore – Sentiero panoramico, percorribile anche in mountian bike o a cavallo, che permette di visitare l’incantevoel territorio montano ed agricolo di Varese Ligure. Lungo il percorso si attraversano boschi di castagno e zone aperte di pascolo. Gran parte del cammino si svolge sulle dorsali secondarie di monti e colli che scendono dal grandioso anfiteatro montuoso che cinge il fiume Vara, nella parte superiore. L’escursionista potrà, quindi, godere di una stupenda vista sulle diverse valli del territorio varesino: la valle del torrente Crovan, del Chinela e dello Sacagliana. With the typical discretion of the Ligurian environment, the territory offers the visitor pleasant surprises, slowly revealing churches and palaces spread in the hamlets, an uncontaminated environment, a long-standing culture. The environment, one of the most intact and suggesting of the whole region of Liguria, the quality of its small artistic treasures – the rural architectures, the peasant culture, the artefacts enriching churches and palaces, the devotion tokens – the businesses and the facilities surprise the visitors for their unexpected variety and consistency. The past lives together with the present of an active rural and commercial town with modern tourist facilities.<br /><br />The urban landscape of the Borgo Rotondo reveals small art treasures. Suggesting planimetries and architectures of rare beauty can be seen in the stone portals, in the halls of the aristocratic palaces and in the precious vestments of the churches, small museums preserving the historic, artistic and religious memory.<br /><br />The Church of Saints Filippo Neri and Teresa D’Avila, opposite the castle, is part of the convent of the Augustinian Nuns, transformed into a secluded convent in 1652. Inside the church, on the left wall, we can see the painting “San Francesco Saverio” made by the painter Gregorio De Ferrari. The structure of the church and its decorations are baroque.<br />The nuns used to cultivate herbs in the monastery’s beautiful garden and they also prepared rose syrups, dried mushrooms and almond paste sweets, hollow and shaped like flowers, vegetables and fruits. The recipe of these sweets, called “Sciuette”, has been jealously kept for centuries and will never leave the walls of the convent.<br /><br />THE CHURCH OF SAINT JOHN THE BAPTIST was built in the 16th century. The life of the Saint is illustrated in the frescoed barrel vault and in a painting in the left aisle; the altars were built thanks to wealthy local families, who endowed the church with important art works. The veneration for the Virgin Mary is very important and two art works bear witness to the devotion of the people: the alabaster statue called “Madonna con Bambino”, brought from England by the Count Pietro Giulio Cristiani in 1551, together with an alabaster “Trinità” and the wooden statue of the “Madonna della Visitazione” dating back to the 18th century. This statue, attributed to Anton Maria Maragliano, who is likely the author of the “Angelo Annunciante”, located in the chapel of the Sacred Heart, is carried in procession every year during the solemn celebrations of the “Madonna di Luglio” Another piece worth mentioning is the baroque choir in walnut wood, which probably comes from the church of Santa Croce, of which only the belfry still remains.<br /><br /><br />THE ORATORY OF SAINTS ANTONIO AND ROCCO is a Baroque jewel next to the parish church of Saint John the Baptist. Its construction is connected with the Confraternity of Saints Antonio and Rocco, founded in 1451 and still operating. The baroque plan is clearly visible on the altar in stuccowork and in the stucco curtains, under which appears the symbol of the Republic of Genoa, a sign of the alliance between the Confraternity and the Genoese Senate. On the walls there are paintings representing the Twelve Apostles, while the ceilings were frescoed by Giuseppe Gaelotti, a 17th century artist. Among the decorations, it is worth mentioning the processional statues of Christ, the lamps decorated in fine gold and the two crosiers in gilt wood of the 17th century.<br /><br />THE BORGO ROTONDO has its origins in a “modern” town-planning scheme designed by the Counts Fieschi, feudatories of Varese Ligure in the 12th century, following their victory over other noble families who wanted to control the territory, a strategic crossroads connecting the area of Parma with the eastern Ligurian coast. The Fieschis wished to build a town that could also be a fortress; hence the elliptic plan on which the houses were built, rigorously in stone with no openings to the outside, except for the two original gates, of which the Sottana gate is still visible. The moat and walls were built after the completion of the Borgo. The Fieschis shared the building expenses with wealthy local families. The economic effort made it possible for craftsmen and merchants to participate in the construction of a common undertaking. In the small square, which originally did not have the “median” houses, there used to be a market. The two-storey houses facing the square all looked alike: the ground floor under the porches was destined for storage or workshops, while the top floor was used as living quarters. The Fieschis also built a church dedicated to the Virgin Mary, which was probably located in the building that now houses the library. Among the “median” houses worth mention is the so-called Casa della Ragione or Casa del Capitano, probably used as a court of justice in the middle of the 16 century, after an unsuccessful plot against the Fieschis. A mullioned window with two lights is still visible.<br /><br />THE CASTLE with its different building phases, discovered thanks to renovation in 1964, is both a witness to and symbol of Varese Ligure’s importance in the Late Middle Ages. The Fieschi family had originally built a house in the northern part of the Borgo, of which we can now see only the northern wall, now the southern side of the Castle. Two names account for the different building phases: Niccolò Piccinino, a Milanese condottiere, who ordered the construction of the high “offending” tower in 1435; Manfredo Landi, who, having married Antonia Maria Fieschi, built the cylindrical keep with its loopholes between 1472 and 1479. The castle, after the defeat of the Fieschi family by the Dorias, was used for several activities and is now privately owned. It is used for exhibitions and lectures.<br /><br />THE AREA CALLED GREXINO, located along the hill that slopes towards the Crovana creek, is one of the first settlements. The BRIDGE, built in 1515, is made of a single span and is a precious symbol of this area. On its southern side, the bridge is embellished by a bas-relief carved in sandstone, representing the Birth, Death and Resurrection of Christ. The dating is controversial. It was probably sculpted by a local artist who tried to reproduce a work carved in alabaster brought to Varese Ligure by a member of the Cristiani family in the 16th century.<br />THE TOWN TOWER was once the belfry of the church of Santa Croce, annexed to the Monastery of the Augustinian Fathers, established in 1563. With the establishment of the Napoleonic Genoan Democratic Republic (1797), the monastery and its hospital were closed. From the church of Santa Croce comes the painting “Madonna della Visitazione” and the “Angelo della Compagnia”. Not far from the Town Tower we find the patrician church of the Counts Chiappe, also the seat of the Confraternita della Morte e Orazione; also called Oratory of Saint Sabina or “Compagnia”. The building, unconsecrated in the 20th century, is now used to host cultural activities. In front of it, we find the House of Count Giuseppe Arrivabene a patriot from Mantua, a literate and a musician, the meritorious founder of the Philharmonic Society of Varese Ligure, which celebrated its 150th anniversary in 2002.<br /><br />FERRARI PALACE, now transformed into a condominium, is located on the northern part of the main square. There was once a bridge that connected the house to the private garden, where the War Memorial is now located. The wedding between Domenico Pallavicini and Luigia Ferrari (1772 – 1841), for whom Ugo Foscolo wrote his most famous poem “A Luigia Pallavicini caduta da cavallo” was celebrated in the building’s private chapel. The portal is embellished with two marble telamons.<br /><br /><br />Museums and art galleries<br />The “Castello dei Fieschi”, is at present privately owned and its use is granted on the occasion of exhibits and conferences.<br />“Museo di Cassego”, traditions and objects of the peasant culture – Cassego tel. 0187/843005<br /><br />TYPICAL HANDICRAFT, AGRICULTURE AND FOOD LOCAL PRODUCTS<br />Mushrooms and chestnuts are the main ingredients of many traditional dishes. The visitor can be delighted also by the organic production of honey and by the cultivation of berries.<br />These are the traditional dishes using agricultural and wood produces:<br />· “Ravioli”, fresh pasta filled with vegetables and meat, seasoned with minced meat or mushroom sauce;<br />· “Croxetti”, small disks of pasta, stamped with floral patterns and seasoned with walnut or pine kernel sauce;<br />· chestnut flour “tagliatelle” seasoned with pesto or fresh ricotta cheese.<br />· Meats, especially lamb and rabbit, flavoured with herbs; vegetable pies covered with a pastry rolled out by expert hands using a rolling-pin and the traditional sweets like the “buccellato”, the “pandolce” and in winter the “castagnaccio” prepared with chestnut flour, pine kernels and raisins.<br />Traditional dishes are cooked using some characteristic tools, such as the “ciappa”, a slate put on the fire to cook the meat and the earthen saucer used to prepare the “figassetta” made with corn flour and the “testieu” prepared with wheat flour.<br />Varese Ligure, furthermore, is located in the heart of the high Vara Valley, called “the organic valley” thanks to the presence in this territory of more than forty organic farms, partners of the two local cooperatives producing organic meats and cheeses.<br />The river Vara, on its hand, offers the fish fans the chance to catch trout and heels.<br /><br />SPORT ACTIVITIES<br />The green valley and its trails invite the visitors to take long walks and to play open-air sports such as trekking, motorbike, horse riding, mountain bike and sports fishing:<br />Sports fishing lake – tel. 0187/842180<br />Trails and guided excursions - CEA (Centro di Educazione ambientale) –tel. 0187/842006<br />Horse trails and horse excursions - Equitazione Canepa Giorgio San Pietro Vara – tel. 389/0841912 and Azienda agricola Ormeia – Loc. Chiappozzo trail: travelling time of about 7 hours – difficult and panoramic trail winding up high along the crests of the mountains surrounding the sources of the river Vara. Close to Mount Riso you can admire the remains of the walls of the Panizzaro tower, that, in the Middle Ages, dominated the hamlet of Comuneglia. You then walk along the ridge of Mount Zatta (1406 mt.), which divides the higher part of the Vara valley from the Taro valley, in Emilia Romagna. You pass along the thick and magnificent beech wood covering the northern side of the mountain. This is an area of special landscape importance, recognised by the European Community. You then walk on the crest of Mount Chiappozzo (1126 mt.), among rocks and pastures where different types of orchids grow. From the top of these rough mountains the sight wanders, on one side, on the Genoese valleys of the creeks Reppia and Graveglia to the promontory of Portofino and to the sea, and, on the other side, on the steep slopes going down to the Vara valley, with some small and enchanting towns clung onto them, surrounded by meadows, fields and vast chestnut woods.<br /><br />Mt. Verruga trail: travelling time of about 6 hours – Walking on this trail plunges the tourist into nature, with its wonderful landscapes and the story of the places. You can walk in vast woods of chestnuts, hornbeams and oaks which cover the fresh northern slopes of Mt. Verruga and Mt. Biscia. The trail is panoramic and the sight is caught by the Graveglia valley and by the mountains and the hills going down to the sea. You cross an enchanted wood with high and strong beech trees, until you reach the meadows on the crests of mounts Verruga and Porcile. The sight wanders on the rough and deep-set valley of the creek Lagorara, the rocky slopes of Mt. Scogliera (during prehistory an important area of extraction and processing of jasper), the massif of Mt. Gottero and on the woods covering mountains and lateral valleys of the Vara valley. On the horizon you can also the rough profile of the Apuan Alps and the coast of Tuscany.<br />You can now proceed among centuries-old chestnut trees and creeks and find the mill of Brichetti and be enchanted by its humble magnificence.<br /><br />Mt. Gottero trail: travelling time of about 7 hours – The trail winds in one of the most relevant Sites of Community Importance in the northern Apennines for the preservation of forestal habitat and for the protection of endemic or rare species and of predators on top of the food chain, such as the eagle and the wolf.<br />In fact, you cross the Regional Forest of Mount Gottero: an area of about 500 hectares of copse beech wood. The sides of the massif of Mount Gottero (name deriving from the ancient Germanic gott hart, wild god) are covered with well-preserved and beautiful beech trees. The area around the top, instead, is characterized by the presence of important meadows, which host several plants that are rare in the Apennines and also various kinds of orchids. From the top of Mount Gottero ( 1639 mt.), the highest in the province of La Spezia, the sight is caught by an extraordinary panorama embracing the Ligurian and the Tuscan-Emilian Apennines and the Po Valley, the Apuan Alps, the mountains and hills of the Vara valley and on the infinite horizon of the sea, the Tuscan coast and the Gulf of La Spezia. In clear days, you can see the whole Ligurian coast, the islands of the Tuscan archipelago and Corsica. Furthermore, you pass through valley crevices with uncontaminated creeks along which grow woods of alders, willow trees and black hornbeams. You can also find some peat-bogs and swampy meadows hosting the typical plants of damp environments.<br /><br />Varese Ligure trail: travelling time of about 7 hours – It is a panoramic trail open to mountain bike or horse, which allows you to visit the enchanting mountain and agricultural territory of Varese Ligure. Along the trail you will find chestnut woods and meadows. A great part of the trail is on the secondary crests of mountains and hills that descend from the mountainous amphitheatre surrounding the river Vara, in the upper part. You will be delighted by the wonderful view of the several valleys of the territory of Varese Ligure: the valley of the Crovana, Chinela and Sacagliana creeks. Originaria dell’Oriente, fu introdotta in Spagna da Mauri, naturalizzandosi e inselvatichendosi. Possiamo raccoglierla dal piano alle zone montane dell’Europa, regioni mediterranee, America settentrionale.<br /><strong>Parti usate</strong>. Le foglie e i fiori.<br /><strong>Fioritura</strong>. Giugno-agosto. I fiori sono azzurri, raramente bianchi o rosa.<br /><strong>Tempo balsamico</strong>. Le proprietà medicinali della Borragine variano secondo i periodi di vegetazione. Ha proprietà emollienti se viene raccolta giovane, in luoghi ombreggiati, quando ha il massimo di mucillagine; raccolta in fiore, è depurativa, aperitiva e sudorifera; raccolta alla maturazione del frutto, è diuretica, in particolare se vegeta in terreni ricchi di nitrato di potassio e secchi. Generalmente le foglie si raccolgono in maggio-agosto; i fiori in luglio.<br /><strong>Composizione chimica</strong>. Mucillagine, nitrato di potassio, resina, tannino, olio essenziale, malato di calcio, allantoina, acido fosforico.<br /><strong>Azione farmacodinamica</strong>. Antiflogistica, antipruriginosa, aperitiva, depurativa, diaforetica, diuretica, emolliente, espettorante, stimolante, sedativa dei bronchi.<br /><strong>Applicazioni terapeutiche</strong>. Acne pustolosa, bronchite umida, cistite, congestioni del fegato, corizza, dartri, eczemi, febbri esantematiche, foruncolosi, ipocondria, nefriti, obesità dovuta ad alterazione del ricambio, pruriti, ritenzione urinaria, scrofola, tosse, tracheite, orticaria.<br /><strong>Preparazioni e dosi</strong>. Fiori: infuso di gr. 5 di fiori per ogni 100 grammi di acqua bollente. Infusione 20 minuti. Colare e bere 2-3 tazze al giorno.Acqua distillata in pozione 25-50 grammi.Foglie: Decotto gr. 3 per ogni 100 grammi di acqua. Bollire 12 minuti. Colare e bere 2-3 tazze al giorno. Come colluttori e per applicazioni, portare la quantità delle foglie a 8 grammi ogni 100 gr. di acqua, e bollire 12-15 minuti.Il succo si somministra nel brodo o nel latte caldi, in ragione di 50-100 grammi.<br /><strong>Nella medicina popolare</strong>.La gente usa le foglie, cotte nelle minestre, o crude in insalata assieme ad altre erbe. Anche i fiori si mangiano in insalata. E’ poco coltivata. La conserva dei fiori risulta efficace in tutte le febbri e come depurativo del sangue. Un bicchiere di sugo ai malati di pleurite significa promuovere loro una forte sudorazione. Nella medicina popolare questo rimedio si dà nell’influenza, nelle bronco-polmoniti, nelle infiammazioni dei polmoni, nelle febbri esantematiche (scarlattina, rosolia, vaiuolo), nelle infiammazioni renali (nefriti) e della vescica nell’ematuria (sangue per via urinaria), e nel reumatismo.L’infuso dei fiori viene usato come diuretico e depurativo: 15 grammi di fiori infusi in una tazza di acqua bollente per mezz’ora. Si beve ben caldo. Le foglie fresche schiacciate e applicate sui tumori infiammati, gli ascessi, ne calmano i dolori. Nei forti dolori della gotta, un cataplasma caldissimo è un sollievo grande. Contro le tossi e il reumatismo opera molto bene l’infuso di 10 grammi di foglie secche in un litro di acqua bollente. Si filtra e si beve a tazzine, tre o quattro al giorno, addolcito con miele o zucchero.<br />Il decotto dei rami e delle foglie è efficace con 30-60 grammi di rami e foglie per un litro di acqua; l’ebollizione sia dolce, e per la durata di un quarto d’ora, vi si aggiunge miele o zucchero, ma non si mettono se il soggetto è affetto da diabete. Il decotto si deve passare attraverso una tela, per evitare i peli della pianta che sarebbero fastidiosissimi alla gola. E’ importante che il decotto e l’infuso vengano bevuti molto caldi, ogni due ore, a piccole tazze, qualora si usino per sudare; tiepidi o freddi, se sorbiti come diuretici. Le foglie verdi si mangiano come spinaci nelle malattie del fegato.Le dosi indicate sono medie, perché da regione a regione gli erboristi le modificano un pochino. Infatti è opportuno regolarsi nelle quantità da bere, a seconda delle necessità.<br />Riepilogando, nei casi di <em>eczema - foruncoli - erpete - scrofola - malattie cutanee,</em> somministrare un infuso di fiori gr. 15 per ogni tazzina di acqua bollente bevendone o facendone bere parecchie volte al giorno ben caldo.<br /><br />Nei reumatismi - gotta, si lascino infondere per una buona mezz’ora in un litro d’acqua bollente 15 gr. di foglie, addolcendole (se il malato non è diabetico) con miele. Vanno prese durante il giorno in tre o quattro volte.<br /><br />Nei casi di tumori - accessi di gotta - infiammazioni varie, sono utilissime le applicazioni come impiastro di foglie schiacciate.<br /><br />Se dobbiamo curare la bronchite - influenza - polmonite - ematuria - nefrite, allora si fa l’infuso con 30 a 60 grammi di fiori in un litro di acqua; si lascia infondere almeno 30 minuti e si prende a bicchierini durante la giornata, purchè si abbia l’accortezza di filtrare bene, onde evitare che i peletti delle foglie non siano trangugiate e irritino la gola.<br /><br />Attenzione!Tutti i termini tecnici sono stati spiegati, sia pure sommariamente nel corso del trattato e negli indici e repertori. Una di queste è il rosmarino.<br /><br /><strong>Nome botanico latino.</strong> Rosmarinus officinalis L.Famiglia botanica. Labiate.<br /><strong>Significato del nome.</strong> Latino: ros = rugiada, marinus = marino: chiamato così per il colore celestino dei fiorellini.Nomi internazionali. It.: Rosmarino; Fr.: Romarin; Ingl.: Rosemary; Ted.: Rosmarin; Sp.: Rosmarino o Romero.<br /><strong>Distribuzione geografica.</strong> Nei paesi del Mediterraneo in genere, in Europa continentale e meridionale, posti pietrosi sabbiosi e secchi, comunissimo e spontaneo nei giardini e coltivato negli orti.<br /><strong>Descrizione botanica.</strong> Arbusto cespuglioso sempreverde, fusto legnoso, foglie lineari opposte coriacee di odore canforato, fiori in glomeruli azzurro-violetti che formano spicastri terminali.<br /><strong>Tempo della fioritura</strong>. Primavera.<br /><strong>Parti usate</strong>. Le foglie secche con i rametti e i fiori. Raramente la foglia fresca (usata come condimento).Tempo balsamico o della raccolta. Primavera-estate.Composizione chimica. Canfene, pinene, cineolo, acetato di bornile, essenze. Olio essenziale e tannino.Azione farmacodinamica. Eccitante e tonico aromatico, diuretico, diaforetico, emmenagogo, irritante cutaneo, antispasmodico.Applicazioni terapeutiche. Giova nella dispepsia atonica, nelle gastralgie, negli stati di languore. Preso a piccole dosi provoca afflusso di sangue agli organi addominali e stimola la secrezione dei succhi dello stomaco e dell’intestino, della bile. Facilita le mestruazioni. Esternamente come linimento o bagno aromatico è stimolante ed elimina i parassiti.<br /><br /><strong>Preparazioni e dosi.</strong><br />Polvere delle foglie gr. 1-2 da ingoiare con il primo cucchiaio di minestra nelle malattie epatiche.<br />Infuso: foglie e rametti tritati gr. 5 in infuso in gr. 100 di acqua bollente, badando di coprire il pentolino, colare dopo 20 minuti di riposo, negli stati adinamici che accompagnano le grandi febbri (febbre da tifo, tifoide, grippe), nelle dispepsie atoniche, quando si tratta di malati indeboliti da un surmenage intellettuale e fisico. Si può anche usare l’infuso di fiori e foglie gr. 2 per 100 gr. di acqua: 3-4 tazzine al giorno. Alcuni autori consigliano l’infuso all’1% nelle dispepsie atoniche, come stomachico, antispasmodico, carminativo, colagogo, emmenagogo; il Rosmarino a forti dosi è abortivo e antisettico.Le dosi per gli animali: cani 4-8 gr; ovini 10-25 gr; bovini 30-100 gr.Un bicchiere d’infuso prima del pasto si prescrive nelle inappetenze, emicrania, stati di debolezza generale, flatulenze e ventosità. Le osservazioni dei Proff. G. Parturier e M.P. Rousselle, facendo dei sondaggi del duodeno, , hanno notato un’azione coleretica traducentesi in modificazioni della bile che oltre ad aumentare di quantità, si fa più chiara, azione che ne conferma l’uso, presa prima dei pasti, nelle colecisti croniche, le piccole asciti con fegato grosso, le cirrosi di Laennec, gli itteri in seguito a ostruzioni ed epatiti.<br /><strong>Estratto fluido:</strong> gr. 2-10 nelle 24 ore.<br /><strong>Tintura</strong>: Rosmarino rametti fogliati polvere gr. 10, alcool a 90° gr. 50, da mettere a macero per 6 giorni e filtrare. Gocce XX-XL su una zolla di zucchero.<br />Vino: 30 gr. di foglie e fiori di Rosmarino per 24 ore a macero in un litro di vino rosso o bianco: 3-4 cucchiai al giorno, come diuretico, nella dismenorrea, menopausa, stati di languore e nell’esaurimento per strapazzo fisico e intellettuale.<br /><strong>Tintura</strong>: 20 gr. di foglie e fiori (meglio raccolti freschi) a macero per 7 giorni in 100 gr. d’alcool a 60°: 15-30 gocce.<br /><strong>Essenza</strong>: gocce IV-V come eccitante dell’utero, nelle digestioni dolorose o difficili.Uso esterno: come stimolante nei casi di stanchezza, spossatezza, debolezza, giovano i bagni in acqua ove si siano bolliti 100 gr. per 1 litro d’acqua i rami di Rosmarino.<br /><strong>Infuso</strong>: impacchi contro le paralisi, ascessi freddi, reumatismo articolare. Bagni aromatizzati per i bimbi striminziti e nelle malattie da raffreddamento. Suffumigi di foglie su stufa rovente nei catarri delle vie respiratorie e nell’afonia.<br /><strong>Essenza</strong>: frizioni contro i pidocchi e la calvizie. It's an area that is well known in Italy however, as it has a reputation as a 'green' organic valley. The main town is Varese Ligure, once a resort for wealthy Genoese families escaping the heat and mosquitoes of the coast in summer. The whole area is making great efforts to be as green as possible: wind turbines and solar panels provide power, and waste is carefully recycled.<br />Many farmers in the valley raise their cattle organically, and the butcher's in Varese Ligure often has queues outside. There is also an organic cheese factory and organic yoghurt factory. Small producers in the valley also make honey - the chestnut one is particularly good . In the hill village of Castiglione Chiavarese, you can also find wine and olive oil at the Azienda Agricola Pinogino.
